For five generations, the Couillaud family has worked their 27 hectares on varied soils of metamorphic rock (gneiss, granite, schist) along with some volcanic sand. The red wines are aged using newer methods such as thermovinification or low temperature vinification which gives very fruity wines. The Cabernet Franc in particular shows a refreshing crunchiness that is still fleshy.
