Country: Mexico

Inspired by the Italian Amaro category, our first recipe experiments with citrus like tangerine, lime, and blood orange. Though native to Asia, these trees now grow across the country, and local conditions plus natural cross-pollination give the fruit unique genetic variations and flavors, which we use to build our own interpretation of Amaro. Bitterness comes from the root of a Mexican green lime variety; the blue color from a small flower. We add sugar and water gradually, with careful timing, to balance flavor and set the ABV.
